Cake Ingredients:
·         3cups sifted all-purpose flour
·         1-1/2 cups candied pineapple chunks
·         3 cups golden raisins
·         1-1/2 cups candied cherries, dried apricots, dried figs
·         1 cup dried currants
·         2 ounces candied orange peel
·         2 ounces candied citron peel
·         1/2 cup orange juice
·         1 teaspoon of baking powder
·         1/2 teaspoon of baking soda
·         1/4 teaspoon of salt
·         2 cups butter or margarine(softened)
·         4 cups confectioners’ sugar
·         8 eggs separated
·         4 cups pecans, walnuts, almonds chopped

Directions:
·         Pineapple chunks, raisins, and cherries should be chopped. Chopped fruit with currants, orange peel, and citron should be combined and soaked in orange juice overnight.
·         The oven must be preheated to 350 degrees F (180  degrees C)
·         The cake pan should be greased with the melted butter.
·         Flour, baking powder, baking soda, sugar, and salt should be sifted together in a bowl.
·         Butter or Margarine, eggs should be added in the center part of the flour mix.
·         Everything should be gently blended together, beaten until it becomes creamy or fluffy
·         Dried fruit mixture, nuts, and currants, orange juice should be sifted together into the batter now and blended, beaten again.
·         The mixture now should be poured into the greased cake pan.
·         Keep this pan in oven and bake this for about 35 to 40 minutes until the cake starts leaving the pan from sides.
·         Knife or wooden pick can be inserted in the center of the cake to take it out clean.
·         The cake should be removed from the oven and made to cool off for few minutes only.
·         Run a knife around the edges to loosen the cake and place a flat plate over the cake pan turn it over to transfer the cake onto the plate.
·         The cake should be made to cool completely.
·         The top surface of the cake can be made with skewer poke holes and brushed with little brandy.
·         This cake will keep several weeks or it can be frozen.
